Name the most famous country that repeatedly has won the coffee bar award hands down for creativity and service in the Mediterranean. Answer: If you thought Spain or maybe Italy you'd be soooo wrong! Although both of these countries did engage in many advertising promotions none really struck the Mediterranean people; in fact Italy has never ever won any award for coffee bar anything in any international award! The Concept of Fresh and Clean applies to the taste of coffee & tea whereas more earthiness is pleasant in chocolate. High quality white chocolate could have a tinge of earthiness and receive rave reviews. Are we contradicting ourselves saying chocolate can have earthiness but coffee and tea should not. Isn't this a contradictory statement ?

Hey sit down. Put away your knives chefs ! Take a closer look at what I wrote. It's all about balance. The artisan that made my white chocolate taste so good added just some earthiness to balance the sweetness found in so many white chocolate dishes. I ask that you apply the same standard to coffee and tea.

When a coffee is too light it hasn't enough body and when roasted too dark has too much body. What's going on ? There's a mismatch between the roast and the origin. Apply a critical analysis to the beans used and you might even find that the roaster misapplied the application of robust beans- those highly caffeinated low grown gems that are used by request only in our store-. How can you be certain these beans are used. First, your stomach will tell you. Second your mind and possibly your heart too. Taste is usually dirty with scents of car tires. In the Jersey Shore area some roasters use them and to mask them with Harrar.

In a regular roast using just Arabica beans you can achieve the same results. Now moving on to tea. An oolong might be flavored using jasmine flowers to tone down the depth of an oolong. Making it an art to achieve its perfection. This is found in our orange oolong tea.
